Instructions:

In a large bowl, combine mashed potatoes, flour, egg, salt, and pepper. Mix until well combined.
Heat a large skillet over medium heat. Add a tablespoon of canola oil and a pat of butter.
Drop spoonfuls of potato mixture into the hot skillet. Flatten slightly with the back of a spoon.
Cook for 2-3 minutes per side, or until golden brown and crispy.
Drain on a paper towel lined plate. Sprinkle with salt immediately.
Serve hot and enjoy!
